In the hustle and bustle of Edinburgh’s notorious Fringe Festival, we brought to you our first pop-up restaurant. The Hidden Wing nestled in a secret location in New Town across from our restaurant on The Royal Mile.
Our guests were given directions to follow the feathers to the sound of the Bagpipes and were welcome into a walled courtyard where they found a piper and the door to The Hidden Wing. The space was truly breathtaking with a juxtaposition of exposed brick walls and crisp white linen. Lit with hundreds of candles, The Hidden Wing was adorned with bespoke artwork, antiques and wild flowers for the eye to marvel at.
Head Chef Fraser Smith’s stunning menu read like a play as courses became acts and a story unfolded about wings in the brink of summer. Married with beautifully balanced cocktails and an elegant wine pairing chosen to complement each dish, the evening tasted sublime.
For one night only the evening was an overwhelming success with one question at the tip of everyone’s tongue, when is the next Hidden Wing?
