Now back in his native Edinburgh, Paul is making the most of top quality products such as Orkney beef, lamb from Dornoch and shellfish from the cold clear waters of the West Coast. |
The MenusThe menus change as ingredients move in and out of season but a typical starter might be the seared Orkney scallops with Stornoway black pudding while the roast rump of Ross-shire lamb with pancetta cabbage and white beans is a popular example of Paul’s main courses.
